The ultimate chicken salad mix that is creamy and super tasty. The most perfect lunch on crunchy cos leaves or between some soft bread or on top on toasted sourdough.

3 Poached chicken breasts or shredded roast chicken ( no skin)
½ cup Mayonnaise
1 Lemon, juice and zest
5 Celery sticks, finely chopped
2 tsp Dijon mustard
⅓ cup Toasted flaked almonds
Salt and Pepper
⅓ Bunch of fresh herbs , tarragon chives or mint

Add the shredded chicken to a bowl and add all the ingredients except for the almonds. Season to taste and refrigerate till ready to serve. Remove the chicken 10 minutes prior and add the almonds.
