
Firstly, make your pesto with a food processor or in a mortar and pestle. Add the basil , pulse or break down in the mortar . Add the pine nuts and garlic. Bring it together by adding small amounts of olive oil so it becomes a bit looser than a thick paste. Add the parmesan cheese and taste for seasoning.
Heat a large fry pan on high.
Assemble the sandwiches with some pesto followed by the tomatoes and sliced cheese. Season with salt and pepper and add the top piece of bread. Add a little smear of butter to the outside of the bread as this will help the sandwiches become brown and crispy.
Add a little olive oil to the pan and add the four sandwiches . Using another pan that is slightly smaller , place this on top and press down. Add a weight (some tin cans or a jar of rice) or you can press down with your body weight. Turn over when golden to cook the other side.
Allow the sandwiches to cool for a minute before cutting and serving.
