prawn saganaki

 1 kg medium green prawns
 1 onion, diced
 4 cloves garlic, minced or sliced
 2 x 400g tinned tomatoes
 1 tsp paprika
 1 tsp dried chilli
 180 g feta cheese
 1 bunch parsley, chopped

Heat a large pan and saute the onion in 1 tbsp olive oil . When it has softened add the garlic. Stir through the paprika and chilli then add the tomatoes. Bring to a boil then turn down to a low simmer and add the prawns. Allow to cook gently for 5 minutes.

Preheat the grill setting in your oven. Crumble the feta cheese over the prawns and tomatoes and place under the grill for 5-7 minutes till prawns are cooked through and the feta has browned.
Top with fresh parsley and crusty bread and serve.
