 800 beef or chicken mince
 1 cup frozen peas, defrosted
 1 onion , chopped
 4 cloves garlic, finely chopped
 1 knob fresh ginger, peeled and grated
 2 tbsp soy sauce
  cup hoisin sauce
 1 lime, juice
 1 bunch coriander, chopped
 1 head of butter lettuce , washed and dried
 1 bunch spring onions, sliced
 1 cup cooked rice

Heat a wok with 1-2 tbsp of light olive oil, add the onion and season with salt and allow to sauté till softened. Add the garlic and ginger.

Add the mince and break it up with a spoon allowing it to brown.

Once the mince is browned add the peas and the rice and mix through.

Add the soy, hoisin and lime juice and allow to cook for a further 5 minutes.

Allow to cool slightly before serving in crisp lettuce cups topped with coriander and spring onions.
