My Favourite Choc Chip Cookies because I just love Coconut!

Preheat Oven to 180 degrees c
In a standup mixer cream the sugar and butter together till smooth and pale, 2-3 minutes.
Add the eggs and vanilla and mix. Scrape down the sides of the mixture periodically.
Once the eggs are incorporated turn the mixer down to low and add the salt, flour and baking powder and soda.
Fold through the choc chips and coconut. Cover with plastic wrap and refrigerate for 2 hour or place in the freezer for 50 minutes.
Roll the dough into pin`pong size balls and place on a sheet tray lined with baking paper. Leave adequat space for the cookies to spread while cooking.
Bake the cookies for 10-12 minutes and allow to cool before eating.
